The Roca brothers will open a restaurant dedicated to their mother at the Sant Julià de Ramis fortress in the Catalan city of Girona. The Roca brothers are famous Catalan chefs with a collection of three Michelin stars and an award for World's Best Restaurant.

The opening is scheduled for April 27th, coinciding with Saint Montserrat Day, her mother's name.

Cook Josep Roca describes the project as ''a tribute to our mother's cuisine'' which is also why they have chosen the highest point of the fortress for its location.

Additionally, the brothers plan to open a distillery space in summer within the same Sant Julià de Ramis site, a neighboring town to Girona with a great historical and architectural heritage.

The distillery will house century-old-mother barrels sourced from a historic distillery in Girona, originally used to produce liqueurs and spirits. Furthermore, the first floor of the exhibition area will be opened to the public, dedicated to the various entities and institutions that have recognized and honored the Roca brothers over the years.

Joan, Josep, and Jordi Roca announced the openings during the second day of the Gastronomic Forum of Girona, in a packed auditorium, as is customary for their events.

Josep Roca emphasized that they intend to create a Catalan cuisine restaurant, but more importantly, one that pays homage to ''matriarchal culture and mother's cooking'' as the three brothers consider their mother's cooking to be the foundation of their culinary philosophy.

Josep also revealed that they will expand the publicly accessible areas of the Sant Julià de Ramis castle, particularly with the distillery space set to be opened this summer.

Visitors will be able to explore the facility and participate in tastings of beverages crafted by the three brothers.

The trio also presented one of their latest gastronomic creations. Roca brothers have prepared a dish inspired by traditional calçotades. A Catalan barbecue event serving calçots, a long white and green spring onions. The dish will be included in next year's Celler de Can Roca's menu, once the calçot season returns.
