Bikineria: Michelin-starred Roca brothers to open experimental sandwich lab in Girona
The "bizarre" project will explore Rocambolesc's "salty world"
The Roca brothers, Catalan Michelin-starred chefs, announced on Tuesday through social media that they will be opening Bikineria, an experimental sandwich lab in Girona's old neighborhood.
Back in July, the three brothers stated that they were working on opening a new space next to Rocambolesc, Roca's ice cream shop.
Jordi Roca, one of the founders, wrote on social media that it will be a "bizarre" sandwich shop "to explore Rocambolesc's salty world," combining "bikinis" with ingredients like green apples.
A "bikini" is a grilled cheese and ham sandwich that became popular in Catalonia in the 1950s when it was served in the Sala Bikini dance club in Barcelona.
